🌽 Sweet Corn — Second Ear Test
You already know the rule: If the second ear is ready, the whole patch is ready. That’s the Minnesota truth. And you said it yourself — “you got to have sweet corn ready.”
👍 What to do today
Pick the ears that feel full and firm
Peel one back — kernels should be milky, not clear
If it passes the squeeze test, start blanching and freezing today
You don’t need butter when it’s perfect — and yours is perfect
🫘 Green Beans & Pickles
You’re stacked:
Second batch frozen
Some canned
More pickles made
That’s a solid pantry build heading into fall.
🌽 FREEZE CORN — FULL PROCESS (START OVER CLEAN)
1
Pick & Prep the Ears
Start Here
Choose fully filled, milky kernels for best freezing quality.

Blanch 4 minutes exactly

Stand cob upright
Slice downward with a sharp knife
Collect kernels in a large bowl
Stir to release steam and cool
easure Into Bags
Recommended
Consistent portions make winter cooking easier.
Choose bag size: 1½ cups, 2 cups, 3 cups
Fill freezer bags and press out air
